豬手麵 Pork Knuckle Vermicelli
材料很簡單The ingredients are very simple
豬手一隻, 菜心, 麵線, A Pork Knuckle, Choy Sum (Chinese cabbage), Vermicelli
買回來的豬手Pork knuckle bought back
需要用豆粉水和醋 把豬手清洗乾淨Pork knuckle needs to be cleaned with soy flour water and vinegar
用一鍋清水, 加兩片薑, 少許薑蔥酒(約一湯匙) Use a pot of water, add two slices of ginger, a little ginger onion wine (about one tablespoon)
把豬手灼水boil pork knuckle
以去除血水, 油和污漬to remove blood, oil and stains
然後用清水洗乾淨Then wash it with water
炆豬手的材料 有草果, 八角, 薑片, 香葉Ingredients for braised pork knuckle include Tsaoko, star anise, sliced ginger, bay leaf

先用大火煮至沸騰Boil over high heat
然後轉細火, 煮兩小時Then turn to low heat and cook for two hours
煮一鍋熱水, 加少許油Boil a pot of hot water, add a little oil
把麵線煮熟cook the Vermicelli
煮至五成熟, 就可以撈起Cook until medium done, then pick it up
用雞湯一大碗Use a large bowl of chicken broth
把雞湯煮至沸騰Boil the chicken stock
然後加入幾片蒜片和薑片Then add a few slices of garlic and ginger
加少許油 add a little oil
把菜心煮熟cook choy sum (Chinese cabbage)
這樣煮出來的菜心, 就會很有光澤The choy sum cooked in this way will be very shiny
再把麵線放入雞湯裏面Put the Vermicelli into the chicken broth
用細火把麵線煮至軟熟Boil the Vermicelli until soft
這樣, 麵線就會有雞湯味In this way, the Vermicelli will have the taste of chicken soup
把麵線撈起, 加入菜心Scoop out the noodle and add the choy sum
豬手魚經煮了兩小時Pork Knuckle already boiled for two hours

表示已經軟熟means it is cooked

如果味道不夠, 可以加少許蠔油If the taste is not enough, you can add a little oyster sauce

加入雞湯add chicken stock
