Spice level : Mild 🌶 Serves: 4
▢ 1 head cauliflower, medium size
▢ 1 tsp ginger crushed
▢ ½ tsp garlic crushed
▢ 1 tsp Kashmiri Chilli (+ ½ tsp for extra spicy)
▢ 1 tsp salt
▢ 1.5 tbs soy sauce
▢ 1.5 tbs lemon juice
▢ 1 tsp sesame oil
▢ ¼ tsp garam masala / mixed spice (optional)
▢ ¾ cup plain flour / all purpose flour
▢ 3 tbs corn flour / corn starch
▢ 1½ tbs semolina
▢ 2 tbsp coriander, finely chopped
▢ ¾ cup water +- 2 tbs
▢ oil, for frying
Preparation:
Cut the cauliflower in medium florets
Blanch them in hot water for 3 minute. (Boil water and add cauliflower, turn off the heat and leave it for 3 minutes)
Drain the florets and set aside.
In a large bowl add ginger & garlic, salt, chilli powder, soy sauce, lemon juice, garam masala, all purpose flour, corn starch, semolina and sesame oil.
Add water and mix well to make a thick batter,
Add in 1/3 rd of florets, coat well in the batter and deep fry in hot oil.
Keep the heat over medium high. Turn the sides after 2-3 minutes.
Fry evenly until golden and crisp. (~ 4-5 minutes)
Drain the pieces on a wire or paper towels. Let cool 5-10 minutes before serving.
Do the same for the remaining cauliflower.
