Who would have thought, last year when I came across Johnny Kyunghwo’s post on making orange Choeng that I would be up to my elbows in the making of Orange Choeng.
I LOVE this use of our Lemons, Oranges and Tangerines.
For most people Choeng is a few oranges, for me it was 16kgs of oranges and nearly 10hours of process from the picking of the oranges to the washing and drying of the fruit.
I get all the equipment washed in boiling water, even the counter is sanitised, and I scald my hands in really hot water to clean them too.
I top and tail the fruit, then slice them, add the sugar, and mix with my hands.
This much fruit cannot be mixed with spatulas, that really hurts the hands, I also love the feel of mixing food on my hands! I get to lick my fingers as well and that always reminds me of helping mummy and my grandma make cakes!
Once the mixture is in the jar, I leave it in the counter for 3days. You are meant to stir it but with so much to stir, I leave it till the 3 days are up.
Next they will go in the fridge for a few weeks and then I will strain it, reserve the liquid for drinks and make jam with the fruit!
It is not such an involved process, it just is for me because I use so much fruit.
