Tongue tickling tasty and unique : YAM PICKLE. This pickle is prepared using a root veggie that is Yam (suran) and the spices like mustard, fenugreek, red chillies. This instant pickle doesn't last longer but you can refrigerate and use for 10 days.

Ingredients:
Yam (suran) - small piece. (1 cup of chopped pieces)
Salt - 1.5 tsp
Red chillies (byadagi) - 10-15 nos.
Red chillies (spicy variety) - 5 to 6 nos.
Mustard seeds - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Asafoetida (hing) - 1/4 tsp
Coriander seeds - 1 tsp
Tamarind - lemon sized
Water as needed
Oil - enough to deep fry the cubes.
MAKES 100 gm pickle . Lasts for 2 days outside the refrigerator.
