Delicious Coconut Veg Curry Recipe
Looking for a comforting and flavorful vegetarian curry? Try this Kerala-style Coconut Vegetable Curry made with fresh coconut, homemade coconut milk, and a vibrant green paste. It’s light, creamy, and pairs perfectly with lemon rice!
🥥 Ingredients
For Coconut Milk:
Fresh Coconut
Coconut Water
Water as needed
For Green Paste:
Fresh Coriander Leaves
2 Green Chillies
Sliced Ginger
For Curry:
2 tbsp Cooking Oil
Green Peas
Sliced Carrots
Sliced Capsicum
Sliced Potatoes
Salt to Taste
Leftover Coconut (from milk extraction)
Pinch of Turmeric Powder
🍽️ Serving Suggestion:
Best enjoyed with Lemon Rice or plain steamed rice.
👩🍳 Method
1. Make Coconut Milk:
Blend fresh coconut with coconut water and plain water. Strain to extract thick coconut milk. Repeat this process two times.
Save the leftover coconut pulp for later.
2. Prepare Green Paste:
Blend coriander leaves, green chillies, and ginger into a smooth paste.
3. Cook the Curry:
Heat oil in a pan.
Add sliced potatoes and sauté for a couple of minutes.
Add carrots, capsicum, and green peas. Stir well.
Add the green paste and cook until fragrant.
Mix in turmeric, salt, and leftover coconut pulp.
Pour in the coconut milk and let it simmer until veggies are tender and curry thickens slightly.
4. Garnish:
Finish with fresh coriander and serve hot with lemon rice!
