Beef Biryani Recipe
Ingredients:
Jeerakasala rice – 5 glasses.
Beef – 1 kg, cut into medium pieces.
Turmeric – 1 tsp.
Biryani Masala – 1/2 tsp.
Pepper powder – 1/2 tsp.
Kashmiri chili powder – 2 tsp.
Garam masala – 1 tsp.
Coriander powder – 2 tsp.
Salt – As needed.
Onion – Sliced thin for frying.
Pineapple – One small bowl, cut into small pieces.
Carrot – 2 nos cut into small pieces.
Coriander, puthina and curry leaves.
Lemon – one.
Ginger – one small piece, Garlic – 5 to 6 pieces and green chili – 6 nos crushed.
Ginger garlic paste - 1 tsp.
Onion - 4 no sliced.
Curd – 1 tsp.
Butter – As required.
Oil – As required.
Water – 7-1/2 glass.
Bay Leaf, cinnamon, star anise, cardamom, cloves, and mace.
Tomato – 3 nos wet grinded.
Cashew and resin.
Preparation:
Step 1
Take the beef in a pressure cooker. Mix it with 1/2 tsp turmeric powder, 1 tsp coriander powder, salt and 1 tsp ginger garlic paste. Add one pinch of coriander, puthina and curry leaves. Mix well. Add 1/2 cup of water. Heat up the cooker. 4 to 5 whistles are enough. Remove the beef from the pressure cooker. Keep the stock aside.
Step 2. Fry the beef.
Take the beef in a bowl and add 1/2 tsp biryani masala, 2 tsp chili powder, 1 tsp curd, 1/2 tsp lemon juice and salt. Mix well. Heat some oil in a frying pan. Add beef and roast them finely. Remove it from the pan and keep aside.
Step 3. Preparation of masala
Heat some oil in a sauce pan and add some butter. Add sliced onion, crushed ginger, garlic and green chili. Add salt for faster cooking. Satue till the onion turns translucent. Add tomato paste. Add 1 tsp coriander powder, 1/2 tsp turmeric, 1 tsp garam masala and 1/2 tsp pepper powder. Add salt if needed. Then add the fried beef and mix it well. Pour the beef stock into the pan. Cook with the lid on and allow it to boil.
Step 4
Heat some oil and butter in a sauce pan. Roast the resins and cashew nuts and keep it aside.
Fry the carrot and keep it aside. Fry the onion and keep it aside.
Heat 7-1/2 glass water in a sauce pan with bay leaves, cinnamon, star anise, cardamom, cloves, and mace. Allow the water to boil.
Fry the rice in a medium flame. Add the pineapple pieces and fried carrot. Pour the boiled water to the roasted rice. Add salt. When the rice is starting to boil, cover it with a lid and cook in low flame.
Step 5. Mixing.
Take a pressure cooker. Fill beef, then rice, puthina and coriander leaves, roasted cashew and resin, and roasted onion layer by layer as shown in the video. Cook in low flame for some time. No whistle needed. Our roasted beef biryani is ready. Serve it in a plate with salad, papadam, and lemon pickle.
