Making Pork Boudin SOLO!
Cajun pork boudin!
20 lbs pork shoulder cut up
Frozen seasoning blend 8 bags (10oz each.)
(Celery, bell peppers, onions, parsley)
Diced jalapeños (10 total)
6 bunches chopped parsley
6 bunches diced green onions
2.5 lbs chicken liver
Salt
Black pepper
Creole seasoning
Chili powder
Cayenne powder
Rubbed sage
Cumin
Water to cover
Natural hog casings
Parboiled rice
