Sihams Kitchen homemade Moroccan eggplant:
1 large eggplant cut small cubes.
Steam them until soft.
1 can of diced tomatoes or 6 tomatoes skinless cut small pieces put it in a saucepan caramelize it until no water.
After the eggplant steamed add it to the caramelized tomatoes, stir for 3 minutes.
Add 3 minced garlic cloves.
1 tbsp red bell pepper paste.

1/2 tsp Harissa.
• Harissa الهريسة Moroccan way spicy sauce.
1 tsp sweet paprika.
Salt.
Stir for 2 minutes.
Then add 1/4 cup vegetable oil.
And 4 tbsp fresh shopped cilantro.
Stir 2 minutes then add 1/4 tsp white vinegar stir it and it is ready.
