Recipe:
For one gallon batch:
7 cups of fresh or frozen elderberries
14 cups water
2 pounds of honey
1 packet Lalvin EC-118
1) Put elderberries and water in a pot, bring to a boil, then simmer for 30 minutes
2) Strain with cheesecloth into a sieve, straining any juice from berries
3) Add honey and mix while still warm
4) Transfer with a funnel to a 1 gallon carboy
5) Cool to room temperature and then add yeast, and air lock
6) Ferment for weeks to months, stirring once a week.
7) Bottle using a siphone when no more foam or bubbles appear
