This classic wheaten loaf is one of our favourite traditional Irish breads – made in a tin for convenience, and enriched with egg and optional seeds for added nutrition and flavour.
It’s quick to make, has a soft crumb, and a lovely crust. Enjoy it fresh with butter, or toasted with jam, soup, or cheese.
🍞 Classic Wheaten Bread (Loaf Tin)
🧺 Ingredients:
7 oz plain flour
6 oz coarse wholemeal flour
1 level tsp bicarbonate of soda
1 tbsp wheatgerm (optional)
1 tbsp bran (optional)
1 tbsp soft brown sugar
Pinch of salt
1 egg
1 tbsp olive oil
¾ pint buttermilk
Pumpkin & sesame seeds (optional – in the mix and/or on top)
You’ll need:
One 2lb loaf tin (approx. 22cm x 12cm x 6cm) brushed well with oil.
👩🍳 Method:
1. Preheat oven to 200°C.
2. Sieve the plain flour and soda into a large mixing bowl.
3. Add the wholemeal flour, sugar, salt, wheatgerm, and bran. Mix well.
4. Beat the egg with half of the buttermilk and the olive oil.
5. Add the egg mixture to the dry ingredients.
6. Stir gently while adding more buttermilk as needed until the mixture is soft and slightly sloppy.
7. Pour into the prepared tin and smooth the top.
8. Sprinkle seeds on top if using.
9. Bake for about 1 hour. For the final 5 minutes, you can turn the loaf upside down to finish the crust. Bread is done when it’s nicely risen, golden, and sounds hollow when tapped underneath.
10. Cool on a wire rack.
🌾 Notes:
This wheaten loaf is a little richer than classic soda bread thanks to the egg and oil.
Seeds not only add texture and taste—they’re full of nutrition too.
Perfect served warm or cold, and it toasts beautifully!
