WHEAT /PLAIN / GRAM FLOUR AATA 2-1/2 CUPS OR 500 GM
SUGAR 1/2 CUP OR TO TASTE
PURE GHEE OR MELTED BUTTER 1/2 CUP OR AS REQUIRED
WATER 3 TBSP
salt 1 pinch (if you add salt in dough,don`t add more)
first make a soft dough from flour (add salt or leave,its up to you)
then leave it for 15 minutes, covered with a plate or cloth
then make pera and roll the dough ball as you do with roti
make layers as you like and cook paratha on medium low heat to get crispy outer layer and soft inner.
use lesser amount of ghee as we have to use it later
when you get a nice golden color on parathas.put them on a big tray.
tear them in to small tiny pieces (use hands as much possible then blitz in a chopper machine)
now on the same flat tawa put the mixture of paratha and add sugar
sprinkle a tbsp water on sugar and cover tawa with a lid.
leave it for 3 to 4 minutes on very low flame.
then open the lid and mix it nicely.
sugar will be melted slowly so also add ghee gradually.
i add 1/2 cup sugar and 1/2 cup ghee in my choori.
again cover the lid and leave it for few minutes.
when sugar melts completely take some choori and press it in your finger.
if it holds a shape it is ready.
that`s why we need more sugar and ghee.
turn off the flame and serve it hot or cold as you like.
add some balai for extra yumminess :D
