ബിരിയാണി കച്ചമ്പര്‍ | Biriyani Kachumber | Biriyani salad

Kachumber, or cachumber, is a salad dish in Indian cuisine consisting of fresh chopped onions, Carrot, beetroot, lemon juice, and green chili. Its regional variation in Kerala is known as Kachamber, Sarlas or Challas. This will be the best side dish for Biriyanis, Ghee rice or Neychoru, Fish fry and more.

ചേരുവകളും തയ്യാറാക്കുന്ന രീതിയും : - ചെറുതായി നീളത്തിലരിഞ്ഞ സവോളയിലേക്ക് അല്പം ഉപ്പ് ചേര്‍ത്ത് കൈകൊണ്ട് നന്നായി ഞെരടിപ്പിഴിഞ്ഞ് അതിലെ വെള്ളം കളഞ്ഞെടുക്കുക. ഇതിലേക്ക് നീളത്തില്‍ കനം കുറഞ്ഞ് അരിഞ്ഞ കാരറ്റ്, ബീറ്റ്റൂട്ട്, പച്ചമുളക്, കറിവേപ്പില ഇവ ചേര്‍ത്ത് ഇതിലേക്ക് അരമുറി നാരങ്ങനീര് ചേര്‍ത്ത് നന്നായി യോജിപ്പിച്ചെടുക്കുക. നല്ലൊരു കച്ചമ്പര്‍ തയ്യാര്‍. ഇത് ബിരിയാണി, നെയ്യ്ച്ചോര്‍, വറുത്ത മീന്‍, ബീഫ്കറി എന്നിവയ്ക്കൊപ്പം നല്ലൊരു തൊടുകറി ആണ്.

Ingredients :-

Thin long sliced onions
Thin long sliced carrot
Thin long sliced beetroot
Thin slices of Green Chilly
Thin slices of Curry leaves
Salt as per taste
Lemon juice

Preparation :-
Add some salt into thin long sliced onions and gently squeeze with normal hand and drain out the water. Then add thin sliced carrots, beetroot, green chilly, curry leaves and squeeze half portion of lemon juice or white vinegar and gently mix all ingredients. Our most delicious Kachumber is ready to serve.
