🇰🇪 Kenyan Carrot Cake Recipe
Ingredients (for 1 medium round or loaf cake)
• 1 ½ cups (180g) all-purpose flour
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon powder
• ½ tsp ground nutmeg (optional)
• ¾ cup (150g) brown sugar (or white sugar if that’s what you have)
• 2 large eggs
• ½ cup (120ml) vegetable oil (sunflower)
• 1 tsp vanilla essence
• 2 cups (about 200g) grated carrots
• ½ cup raisins or sultanas (optional)
Optional topping
• Powdered sugar dusting
• Or simple lemon glaze
Method
1. Preheat oven to 180°C (350°F). Grease and line your baking tin.
2. In a bowl, sift flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
3. In another bowl, whisk together eggs, sugar, oil, and vanilla until smooth.
4. Fold in the grated carrots, raisins, and pineapple/apple.
5. Gradually mix in the dry ingredients until just combined (don’t overmix).
6. Pour batter into the prepared tin.
7. Bake for 35–45 minutes (loaf may take closer to 50), until a skewer inserted comes out clean.
8. Cool before slicing. Dust with icing sugar or drizzle with glaze if desired.
