Shkembe Chorba
Ingredients (4–6 servings)
700 g beef tripe, cleaned thoroughly
1 L water (for the second boil)
½ Maggi cube (beef or chicken flavour) — my secret touch
300–500 ml whole milk
30–50 g butter
1 tbsp plain flour (optional, for thickening)
1–2 tsp paprika (sweet or smoked)
Salt to taste
Black pepper to taste
3–6 garlic cloves, crushed or grated
3–4 tbsp vinegar (for the garlic sauce)
Chilli flakes — as much as you can handle
