Artificial intelligence is taking over everything... but can it bake a great loaf of bread? Today, I put AI to the test by using it to design a sourdough sandwich bread recipe. From ingredient ratios to fermentation times, I let AI call the shots, but does it actually work?
In this video, I mix, ferment, shape, and bake an AI-generated sourdough recipe to see if technology can rival a well-practiced bakers intuition. Will this be the future of bread baking, or is sourdough still an art best left to humans?

Ingredients
• Bread Flour: 300g (60%)
• All-Purpose Flour: 200g (40%)
• Water: 350g (70%)
• Sourdough Starter: 100g (20% of total flour weight, 100% hydration)
• Salt: 10g (2% of total flour weight)
• Butter (optional): 20g (4%) for a softer crumb
Instructions
1. Mix Dough
1. In a large bowl, combine the bread flour, all-purpose flour, and water. Mix until no dry flour remains. Cover and let rest (autolyse) for 30-60 minutes.
2. Add the sourdough starter and salt. Mix thoroughly by hand until fully incorporated. If using butter, knead it in after the starter and salt are mixed.
2. Bulk Fermentation
1. Perform 4 sets of stretch-and-folds every 30 minutes for the first 2 hours of fermentation.
2. Let the dough continue to ferment at room temperature until it has risen by 50%, about 3-4 hours total.
3. Shape the Dough
1. Lightly flour your work surface and shape the dough into a tight log that fits your loaf pan.
2. Place the dough into a greased 9x5-inch loaf pan, seam side down.
4. Final Proof
1. Cover the dough and let it proof at room temperature until it rises to just below the rim of the pan, about 2-4 hours depending on room temperature. Alternatively, refrigerate overnight for a cold final proof.
5. Bake
1. Preheat your oven to 400°F (200°C). Place an empty pan or tray on the bottom rack to create steam.
2. Once the oven is ready, add hot water to the steam tray and place the loaf in the oven.
3. Bake for 35-40 minutes, or until the loaf is golden brown and reaches an internal temperature of 200°F (93°C).
6. Cool
Remove the loaf from the pan and let it cool completely on a wire rack before slicing.
