INGREDIENTS:
SWEETENED RASPBERRY PUREE
350 g frozen (or fresh) raspberries
50 g caster sugar
RASPBERRY MERINGUE
110 g egg whites (around 3 egg whites)
50 g raspberry puree (from above)
1 tbsp or 1 x 5g sachet egg white powder
200 g caster (superfine) sugar
70 g icing (confectioners) sugar
WHITE CHOCOLATE LAYER
50 g white chocolate
1 tsp vegetable oil
RASPBERRY WHIPPED CREAM
350 g double (heavy) cream
50 g raspberry puree (from above)
20g caster (superfine sugar)
TO FINISH
Fresh berries of your choice - I have used raspberries, strawberries and cherries
*Cherries on this recipe do contain stones so please be careful when eating them, or even better remove the stones
