Written Recipe : Atentic Ilish polau -ইলিশ পোলাও
Ingredients:
Hilsha Fish (Ilish Mach): 3 pieces
Turmeric Powder: 1/3 tsp (optional)
Chilli Powder: 1/3 tsp (adjust to taste)
Salt: 1/3 tsp
Bangladeshi Kalojeera / Chinigura Rice: 1.5 cups
Hot Water: 4 cups
Cooking Oil: 2 tbsp
Mustard Oil: 1 tbsp
Onion Paste: 2 tbsp
Fresh Cumin Paste/Powder: 1/2 tsp
Green Chilli Paste: 1/2 tsp (adjust to taste)
Whole Green Chillies: 5-10 (adjust to taste)
Salt: 2 tsp
Fried Onion/ Beresta: 1/4 cup
Preparation Steps
1. Marinate the Fish
Step 1: In a bowl, marinate the Hilsha fish with turmeric powder, chilli powder, and salt.
Step 2: If preferred, you may skip the turmeric powder, but it helps reduce the fishy smell.
Step 3: Cover and set the marinated fish aside for 10-15 minutes.
2. Soak the Rice
Step 1: In a separate bowl, add 1.5 cups of Bangladeshi Kalojeera/Chinigura rice.
Step 2: Soak the rice in room temperature water for 10 minutes.
Step 3: After soaking, rinse the rice 2-3 times and drain it using a strainer.
Cooking Method
1. Preparing the Masala
Step 1: Heat a medium-sized cooking pot (preferably 28 inches in diameter) over medium heat.
Step 2: Add 2 tbsp cooking oil and 1 tbsp mustard oil to the pot.
Step 3: Once the oil is heated, add the onion paste, cumin paste, and green chilli paste.
Step 4: Stir continuously for 4-5 minutes until the oil separates from the spices.
2. Lightly Frying the Fish
Step 1: Gently add the marinated Hilsha fish to the pan.
Step 2: Fry each side of the fish for 2 minutes, ensuring not to overcook.
Step 3: Remove the fish from the pan and set aside, leaving the masala/gravy in the pan.
3. Cooking the Rice
Step 1: Add the soaked, rinsed, and drained rice to the pan with the masala/gravy.
Step 2: Mix the rice well with the masala, then add the whole green chillies and salt.
Step 3: Fry the rice for 5-6 minutes until you hear a cracking sound.
Step 4: Add 4 cups of hot boiling water to the pan, cover, and cook until the water reduces by half.
4. Final Cooking
Step 1: Once the water has reduced by half, gently place the fried Hilsha fish pieces on top of the rice.
Step 2: Cover the pot and cook on low flame for 5 minutes.
Step 3: After 5 minutes, uncover and gently scoop up some rice from the side to place over the fish.
Step 4: Cover again and cook for another 20 minutes.
5. Finishing Touch
Step 1: Uncover the pot and gently scoop out the rice from the fish pieces.
Step 2: Carefully remove the fish from the rice and lightly flip the rice from top to bottom for even cooking.
Step 3: Add fried onions (beresta) on top of the rice.
Step 4: Place the fish pieces back on the rice and turn off the flame.
Step 5: Let the Ilish Polau rest for 10 minutes.
Serving Suggestions:
Serve the Authentic Ilish Polau hot, garnished with additional fried onions if desired. Enjoy the traditional flavours of this Bangladeshi delicacy!
Tips:
Avoid soaking the rice for too long to maintain its fragrance and prevent it from breaking apart.
Using mustard oil enhances the authenticity and flavour of the dish.
Adjust the amount of green chillies and chilli powder according to your heat preference.
