Aloo Matar Pulao Recipe
Ingredients:
2 cups double-steamed rice
3 medium-sized potatoes, diced
2 cups green peas (frozen)
3 cups water
1 tbsp coriander seeds
1 tbsp fennel seeds
1 tbsp black peppercorns
1/3 tsp cloves
2 cinnamon sticks
1 black cardamom
3-4 green cardamom
2 star anise
3 bay leaves
1 chicken cube (optional)
1/3 cup oil
2 medium onions, chopped
1 tbsp ginger-garlic paste
1 tbsp cumin seeds
1 tbsp green chili paste
Salt to taste
1/2 cup water
1 medium tomato, sliced
1/3 cup yogurt
1 medium onion, fried (for garnish)

Instructions:
1. *Prepare Rice*: Rinse and soak rice for 30 minutes. Drain and set aside.
2. *Sauté Spices*: Heat oil in a pot, add coriander seeds, fennel seeds, black peppercorns, cloves, cinnamon sticks, black cardamom, green cardamom, star anise, and bay leaves. Sauté until fragrant.
3. *Cook Onions and Potatoes*: Add chopped onions and cook until golden brown. Add diced potatoes and cook until slightly tender.
4. *Add Peas and Spices*: Add green peas, ginger-garlic paste, cumin seeds, green chili paste, and salt. Mix well.
5. *Add Rice and Water*: Add soaked rice, water, and chicken cube (if using). Bring to a boil, then reduce heat and cover.
6. *Finish with Yogurt and Tomato*: Once rice is cooked, fluff gently. Mix in yogurt and top with sliced tomato.
7. *Garnish*: Garnish with fried onion and serve hot.

Tips:
Use high-quality basmati rice for the best results.
Adjust spice levels according to taste.
Serve hot with raita or salad.
