Reverse Seared Tri-Tip on the New Yoder YS640S

Reverse seared Tri-Tip is in our opinion a great way to prepare Tri-Tip. That smoke flavor mixed with the char from fire delivers a great texture and delicious beefy bite. Tri-Tip is not as popular in South East Texas as it is in some other parts of the U.S. In the land where brisket is king, the Tri-Tip takes a back seat. When we see it in the stores we will usually grab one as it add variety and really a different taste than other normal Texas Fare. We took this Tri-Tip and rubbed it up with Sucklebusters 1836 Rub. Smoked at 225F to temp rather than time - and took the internal temp to 115F. We then pulled the now smoked Tri-Tip from the Yoder YS640S and installed the Grill Grates. Set the Yoder ys640s to 400F and let the pit come to temp. When the Grill Grates got to right at 500F we added the smoked Tri-Tip back to the smoker and grilled them about 4-5 min per side over the Yoder's open fire box. When Internal Temp reached 130F we removed and let Rest 20 min. We then Sliced and served. Remember when slicing Tr-Tip it has 3 distinct grains that need to be cut against the grain. Not cutting a Tri-Tip properly leads to chewy meat. This reverse seared Tri-Tip turned out amazing give it a shot!
