Here's a simple and flavorful Andhra-style Fish
Fingers recipe, known for its bold spices and
crispy texture:
Restaurant-Style Fish Fingers
Ingredients
For the marinate:
Boneless fish fillets – 350 g
(cut the fillets into finger-length strips
about 1-inch thick)
Lemon Juice - 1 tsp
Black pepper powder - 1 tsp
Garlic – 1 tbsp cloves, finley chopped
Green chili – 1 tbsp finely chopped
Red chili flakes – 1/4 tsp
Mustard paste - 1/4 tsp
Coriander leaves - 1/4 tsp finely chopped
Maida - 2 tsp
(refined wheat flour)
Egg - 1 (for binding)
Turmeric powder – 1/4 tsp
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Garam masala – ½ tsp
Lemon juice – 1 tbsp
Salt – to taste
For frying:
Oil – for deep or shallow frying
Preparation Method
Clean the fish:
Rinse the fish fillets, pat them dry
and cut them into even-sized strips
or "fingers."
Marinate:
In a bowl take fish fingers, lemon juice,
salt, black pepper powder and mix well until
the fish fingers are well coated and sticky and
let it marinate for atleast 30 minutes.
Add to Marinated fish fingers finely choped garlic
chopped green chili black pepper powder,
red chili flakes, maida, coriander leaves, beat the
egg mix the yolk and white until they combine
and add turmeric powder and keep this in the
fridge for about an hour.
Coat:
Roll in breadcrumbs.
Take bread crumbs, roll in bread crumbs, pressing each
fish finger gently for a firm coating.
Place on a tray and chill for 15–30 minutes
(helps coating stick during frying).
Fry:
Heat oil in a deep pan or kadai.
Once hot, fry the fish fingers in batches
on medium-high heat until golden brown and
crispy, about 3–4 minutes per batch.
Remove and drain on kitchen paper.
Serving Suggestion
Serve hot with:
Lemon wedges
Sliced onions
Mint chutney or Andhra-style spicy
tomato chutney
Tips for Best Results:
Panko bread crumbs give a better crunch
than regular ones.
For extra crunch: double-coat with egg + breadcrumbs.
