Pavlova Virgin Attempts Claire Saffitz's Pavlova with Mango-Lime Coulis | Dessert Person Recipe Test

Join for my first time making a pavlova! With grocery prices so high, I'm not letting anything go to waste! So leftover egg whites from last week's Tiramisu are getting turned into this pavlova. Claire recommended backing this in a spring form pan in her recipe video; in my opinion, it doesn't add to the aesthetic vs a free-form / shaped on the pan pavlova.

6 large egg whites (210g), at room temperature
½ teaspoon Diamond Crystal kosher salt
¼ teaspoon cream of tartar, or ½ teaspoon distilled white vinegar
1 cup granulated sugar (200g)
1 cup confectioners’ sugar (120g)
1 teaspoon vanilla extract
1 cup heavy cream (240g)
½ cup crème fraîche (120g)
¾ cup passion fruit pulp
1 tablespoon agave
Optional ½ teaspoon of vanilla extract for Whipped Cream

Mango-Lime Topping (my recipe)
1 pound mango, fresh or frozen, cut into cubes
zest and juice of 1 lime
2 TBSP granulated sugar
Cook over medium heat until fruit breaks down. Puree until smooth. Store in an air-tight container for up to 4 days.
