Recipe:
Carnivore Burger Bun
2 Whole Eggs
1 tbsp Baking Powder (or make your own aluminum free version with 1 tsp Cream of Tartar and 2 tsp Baking Soda)
1/2 tsp Salt
1-1/2 cups Heavy Cream Powder
Whisk whole eggs and baking powder together until well blended (2 -3 minutes). Add in Heavy Cream Powder and mix with spatula until a sticky dough forms (3 - 4 minutes). Divide dough in two equal portions. Bake at 350 degrees for 18 minutes. Allow to cool. Slice in half.
Portion 3 - 4 ounce smash burger balls from 75/25 ground beef.
Heat a cast iron skillet or griddle to about 450 degrees. Smash burger balls onto the cast iron without adding oil or butter. Use parchment paper between the burger balls and your smasher to avoid sticking. Season with salt immediately. Allow your patties to cook 90 percent on the first side to create a beautiful crust. Flip and top with cheese of your choice. Toast buns and build your delicious Carnivore Smash Burger! Enjoy!
