UDUPI SAMBAR RECIPE / UDUPI HOTEL SAMBAR RECIPE
This sambar comes from a place called udupi where sambar is very traditional and very famous as well.
The main uniqueness of Udipi Sambar(Udupi Sambar) is the sweetness. Udupi type sambar is mostly similar to our Tamilnadu Sambar but with the extra flavor of jaggery. We often visit Udupi Krishnar temple and during the bojan time, they serve this delicious sambar. This sambar goes well with rice, dosa and also for other South Indian Breakfast.
What makes this udupi sambar so special is the sambar masala. The masala is made fresh each day and added to sambar. This sambar has a little coconut in it which makes it more tasty. I can assure you that when you make this sambar the smell just fills all over your house and it is simply divine.
HOW IT’S MADE
Ingredients
Toor dal 1/2 cup
Fenugreek seeds 1/2 teaspoon
Urad dal 1 tbspn
Red chillies 10
Coriander seeds 1 1/2 tablespoons
channa dal 1tbspn
urad dal 1tbspn
Curry leaves - Five sprigs
Coconut (grated) 4 tbspn
Mustards seeds 1/2 teaspoon
Asafoetida - One pinch
Green chillies 2 slit
Vegetables of choice (brinjals, pumpkin, yam) 2 cups (diced)
Tamarind juice - lemon sized ball of tamarind soaked in 1/3 cup of water.
Salt to taste
Jaggery or brown sugar 1 1/2 teaspoon
Oil 2 tablespoon
