Welcome to Bamyan!
In this episode, we use an old Afghan cooking method to make a healthy vegetarian dish using only vegetables and fire. We prepare a mix of potatoes, turnips, cauliflower, tomatoes, onions, and zucchini. Everything is cooked without oil, inside a traditional clay tandoor using firewood — just like our ancestors did.
Simple Recipe:
Peel and chop all vegetables (potatoes, cauliflower, tomatoes, onions, turnips, zucchini).
Add salt, coriander seeds, and local spices.
Place everything into a deep pot.
Seal the pot lid with dough.
Bury the pot in the tandoor oven and let it slow cook.
Meanwhile, we also bake Afghan village bread next to the fire.
