Chicken Soup with Fresh Milled Noodles

There is nothing better than having a hot bowl of Chicken Noodle Soup on a cold New England night. The only thing that makes it better, is when the noodles are made with fresh stone ground wheat. Hope you enjoy it as much as we did.
Recipe:
4-5 chicken thighs, bone in skin on preferred
1/4 tsp salt
1/4 tsp pepper
1 Tbsp olive oil
1 small onion diced
2 c carrots peeled and chopped
2 c celery chopped
2 garlic cloves grated fine
1 bay leaf
1 tsp thyme
1 c white wine
4 c chicken bone broth (homemade is best)
1tsp dried dill
1 tsp dried parsley
noodles of choice, I used homemade
Pasta:
1 cup stone ground and fine sifted durum wheat
1 egg
water (to 1 serving measurement line)
I used a Phillips Pasta maker, using the measurement cups for the machine.
Fell free to use store bought noodles, I would highly suggest cooking the noodles directly in the soup, instead of a separate pot.
