This Missouri Mix and biscuit recipe come from “Granny’s Kitchen Shelton, Washington compiled by the Mason County Senior Center” which is from 1975.
Missouri Mix (basic)
9 cups sifted all-purpose flour
1 cup plus 2 TBSP nonfat dry milk solids
4 TSP salt
1/3 cup double acting baking powder
1 ¾ cups vegetable shortening (or you can use 1 ½ cup lard)
Stir baking powder, dry milk, and salt into sifted flour until well mixed. Cut fat into flour until mixture resembles coarse cornmeal. Yield: 13 cups of mix. Storage: If vegetable shortening was used, you can store at room temperature for up to 6 weeks. If lard was used, store in fridge.
Basic Biscuits
2 cups Missouri Mix
½ cup water
Stir mix and water together about 20 to 25 times. Knead on lightly floured surface about 15 times. Cut into squares with a floured knife or cut with a floured biscuit cutter. Put biscuits onto a parchment lined baking sheet and bake at 425F for 10 minutes.
