When I was young I thought I was doing my grandmother a solid by washing her family heirloom cast iron skillet. I used Dawn soap, and unbeknownst to me, erased decades of "seasoning" that he said made her cooking so good. He tanned my hide.
Now, however, I've developed my own technique, and while it does get rid of some "seasoning" ie, germs from old food remnants, it cleans while not coating the skillet in soap. The trick? Use alcohol like a cheap vodka, to deglase the skillet before wiping clean. Thank me later!
