Amazing Pumpkin Cake (AKA Pumpkin Bars) A Holiday or Anytime Favorite!

Whether you are making this for your own table or as a cake to take to somewhere else for a gathering or your work pot luck, you cannot go wrong with this! Great for the Holidays! Great for anytime you are wanting a delicious cake!
Pumpkin Cake
2 cups sugar
1 to 2 cups of 100% pumpkin purée or a 15 oz can
4 eggs
1 cup oil OR 1 cup of butter (2 sticks of melted butter)
1 tsp vanilla extract (I added off camera)
2 cups all purpose flour
2 tsp cinnamon
1/2 rounded tsp salt
These 3 ingredients are optional, but I highly recommend:
1/2 teaspoon ginger (optional)
1/4 tsp ground nutmeg (optional)
1 tsp ground cloves (optional)
NOTE: I misspoke in the video, the following is the actual and CORRECT measurements -
1 tsp baking soda
1 tsp baking POWDER

1 cup chopped toasted pecans (optional) for sprinkling over the top of the icing
Preheat the oven to 350 degrees. In a large bowl, beat the sugar, pumpkin, eggs and oil until well blended as shown. In a separate bowl, whisk together the flour, cinnamon, nutmeg, ginger, cloves, baking soda, and salt. As shown in the video, gradually beat in the dry flour mixture a little at a time to the pumpkin mixture. Pour the batter into a greased 9x13 baking dish. Bake for 30-40 minutes. Start checking at 30 minutes, when a butter knife, skewer or toothpick stuck into the center of the cake comes out clean, the cake is done! NOTE* you can also tell when the edges of the cake are pulling away from the edge of the pan as shown. The cake needs to cool completely. Top with cream cheese icing. ENJOY!!
