VEGAN Sautéed Butternut Squash in Coconut Milk | Filipino Ginataang Kalabasa
Happy New Year! Our first video of 2021 features a Filipino vegetable stew which is so easy to make yet tastes amazing! It's the perfect marriage of the natural sweetness of butternut squash, crispiness of green beans and bokchoy and creaminess of the coconut milk. Enjoy!
Yield: 4-6 servings
Ingredients:
1 Tbsp olive oil
100g | 1 small onion, sliced
4 garlic cloves, minced
1 tsp grated ginger
2 pcs roma tomatoes, chopped
650 g butternut squash, cut into 1-in cubes *or buttercup or kabocha squash
400 ml | 1 can coconut milk
2 pcs long green chillies (optional)
65 g | 15 pcs green beans *or long beans (sitaw)
200 g bokchoy *or spinach, mustard leaves, yu choy, moringa/malunggay leaves
1 tsp kosher salt, or to taste
⅛ tsp freshly ground black pepper, or to taste
a pinch of red chili flakes, or to taste (optional)
