Panaeng pork curry

The traditional method of “Panaeng” takes time. The whole chicken (including its legs) are crossed tied and slowly cooked within a curry sauce in a large pan (cooked until the sauce is reduced and thickened.) This process gives the dish its signature taste, full of intense flavours of spices and meat.
Panaeng is traditionally cooked with chicken or beef, but this recipe uses pork.
I’d say this is the easiest curry recipe in my cookbook, one with intense flavours of curry that I guarantee you’ll love!
