Lemon Cake Recipe I Lemon Syrup Cake I Quick & Easy
Ingredients:
125g butter, softened
1 cup or 200 g Caster Sugar
2 extra large eggs or 3 small eggs
1 tbsp Lemon zest
2 tbsp Lemon juice
1.5 cup or 225 g self raising flour
1/2 cup or 125 ml milk
¼ cup Caster Sugar + 2 tbsp Lemon juice, extra
Directions:
1) Pre-heat oven to 160°C fan-forced. Grease and line a 20 x 10cm loaf pan.
2) Using electric beaters, cream the butter and sugar until pale. Add eggs one at a time until well combined. Add lemon rind and lemon juice.
3) Fold in the flour alternately with the milk until mixture is smooth. Pour into prepared loaf pan and bake for 40-45 mins or until an inserted skewer comes out clean.
4) Meanwhile, combine the lemon juice with the extra sugar, stirring until dissolved. Pour over the hot cake and allow to cool in the pan.
Tip : Use all the ingredients at room temperature for best results.
