Potatoes O'Brien (from 1870's Homestead)
2 Cups cubed potatoes
1/3 cup diced sweet peppers
1/3 cup onion
1 tsp minced garlic (I didn't include the garlic)
1 tsp salt
1 tsp pepper
2-3 TBSP of oil
Mix together and store in freezer bags.
