...... Preparations .....
For Boiling rice -- Ingredients
1.5 cups biryani long grain rice + 1 tsp ghee + 1/2 tsp salt
For Boiling rice -- Direction
Wash and soak rice for 1/2 hour.Boil 2 litres water, add salt and ghee, add rice to the boiling water. Strain when it is 70% done.
For rice layer -- Ingredients
Boiled rice
2 tbsp ghee
1/2 tsp dry ginger powder / सूढ
1/2 tsp salt
2 tsp lemon juice
1/2 cup pineapple pieces
1/2 cup apple pieces
1 tbsp fried raisin
For rice layer -- Directions
Take a mixing bowl, add all the ingredients
For veggie layer -- Ingredients
150 gms / medium big size potato
150 gms yum/ rataloo / kand
2 slices of bread
1 tbsp oil
1 tbsp ghee
1.5 tsp jeera
2 bay leaf
1 big cardamom
2 hot whole red chillies
1 cup shredded onion
1 tbsp chopped ginger garlic and green chillies mix
2 tsp coriander powder
2 tsp red chilli powder
1/2 tsp turmeric
Salt - to taste / 1 tsp
1 cup thick beaten curd
Fried potatoes roundels
Fried yum roundels
Fried bread croutons
Freshly grounded whole spices*
(2 -3 cloves, 5 black peppers,
2 green cardamom, 1 inch cinnamon - mix & ground in coarse powder)
For veggie layer -- Directions
1.cut potato roundels with skin, cut yum roundels and keep both roundels in water. Divide bread into equal size square pieces
Heat oil, fry roundels and bread pieces on moderate heat. Keep all fried items on tissue paper to absorb all extra oil
2. Heat a pan, add oil, ghee, jeera, bay leaf, big cardamom, onion and chopped ginger garlic chilli
3. Cook till onion becomes golden, add coriander powder, red chilli powder, turmeric and salt, add water to prevent masala to burn
4. Add curd, whisk fast to prevent from curdling
5. When masala cooks well & leaves oil, add fried potato, yum and bread croutons
6. Spread freshly grounded powder and turn off heat.
7. Cover and keep it aside
For arranging layers -- Ingredients
1. 1/4 cup chopped coriander leaves
2. 1/2 cup warm milk with 1/8 tsp saffron, soaked
3. Fresh onions and tomato slices
4. 1 tsp garam masala
Assembly - setting layers - no heat is required
1. Take a pan, grease slightly with oil, spread half of the rice evenly
2. Arrange veggies layer, sprinkle coriander leaves, pinch of garam masala and saffron milk
3. Arrange rest of rice, sprinkle coriander leaves, garam masala, rest of cashews and rest of saffron milk
4. Decorate with few fried veggies, raw onion and tomatoes
