I want to thank Stuckey’s for sending us their pecan logs, to make this recipe. My family loves Stuckey’s, so we we’re excited to incorporate their pecan logs into one of my favorite desserts…peach cobbler.

Ingredients
• Fresh peaches, peeled and sliced (about 4 cups) or 4 16oz cans of peaches
• 2 cans of water
• 2 cups sugar
• 1/4 cup brown sugar
• 1 stick of butter
• 3 teaspoons ground cinnamon
• 1 1/2 teaspoon ground nutmeg
• 2 teaspoons of vanilla extract flavor
• 2 teaspoons of lemon extract flavor
• 1 teaspoon fresh lemon juice
• 2 teaspoons cornstach
• 2 premade pie crust shells
• 2 Stuckey’s Pecan Logs
For the Cobbler Crust:
• 1/2 cup unsalted butter
• 4 premade pie crust shells
Topping
• 2 Stuckey’s Pecan Logs
Instructions
• Preheat Oven: Set the oven to 425°F (220°C).
• Peach Filling: In a large pot, add 4 cans of sliced peaches or fresh peaches if you have them, stick of butter, 2 cups sugar, 1/4 cup brown sugar, cinnamon, nutmeg, lemon extract, vanilla extract, lemon juice, 2 cans of water and let simmer for 30 minutes on medium heat
• Add cornstarch to water and slowly add to peach mixture
• Cook ingredients on top of oven for another 15-minutes on medium heat
• Pour into a 13x9 baking dish
• Top with 4 pie crust shells cutting slices before placing over the peach cobbler stock
• Assemble and Bake: Bake for about 20-25 minutes or until the topping is golden and the peaches are bubbling.
Stuckey's Pecan Log Topping
• Melt 2 Stuckey's Pecan Log Candies—Chop the Pecan Log candies into small pieces.
• Melt them in a saucepan over low heat, stirring continuously to prevent burning. Alternatively, you can melt them in the microwave, using short intervals and stirring in between until fully melted.
• Add the Melted Candy to the Cobbler
• Just before the cobbler finishes baking, carefully remove it from the oven and Drizzle the melted Pecan Log candy over the top of the cobbler
• Final Bake: Return the cobbler to the oven and bake for an additional 2 minutes to allow the candy to slightly crisp up and integrate with the topping.
• Serve and Enjoy: Let the cobbler cool down a bit after baking. The melted Pecan Log will add a rich, nutty, and caramel-like flavor to your peach cobbler! Enjoy with a scoop of vanilla ice cream or whipped cream if desired!
This recipe serves about 6-8 people and is perfect for a cozy dessert.
