Hello everyone! Today, I’m sharing a classic Turkish dessert: Kazandibi. With its rich caramel layer and creamy texture, this milk-based dessert is perfect for special occasions or simply treating yourself. Here's everything you need to know:
Ingredients (Serves 25):
3,300 grams full-fat milk (preferably fresh milk; if using pasteurized, make sure it’s full-fat)
1 kilogram granulated sugar (you can increase up to 1,250 grams for a sweeter taste)
240 grams cornstarch
1 packet vanilla sugar
100 grams margarine
1 bowl granulated sugar (for caramelizing)
1 bowl walnuts (finely chopped or slightly coarse, as preferred)
Preparation Steps:
Preparation:
Mix the cornstarch with a small amount of cold milk until smooth. Add the vanilla sugar to this mixture.
Heat the remaining milk in a pot over medium heat and add the margarine.
Once the milk is close to boiling, add the granulated sugar and stir until dissolved.
Making the Milk Pudding:
Gradually add the cornstarch mixture to the boiling milk while stirring constantly to prevent lumps. Cook until it reaches a thick, creamy consistency.
Caramelizing the Sugar:
Place an aluminum tray on the stovetop and evenly spread one bowl of sugar on it.
Rotate the tray to caramelize the sugar evenly until it turns light brown.
Layering the Dessert:
Pour a thin layer of the milk pudding over the caramelized sugar in the tray. Place the tray back on the heat briefly to balance the caramel’s bitterness and enhance its flavor.
Pour the remaining pudding into a second tray. Let both trays cool at room temperature, then chill completely on ice to set the dessert firmly.
Shaping the Dessert:
Once cooled, cut each tray into 25 equal pieces.
Take a piece of the walnut mixture and press it lightly onto each dessert portion. Shape them as desired using a damp steel spatula to prevent sticking.
Serving:
Top with cinnamon, cocoa, or shredded coconut, as desired. Pair it with unsweetened iced coffee for a delightful combination.

Stir continuously during cooking to achieve a smooth pudding.
Be cautious when caramelizing the sugar; avoid burning it for the best flavor.
Use a damp spatula to shape the dessert neatly without sticking.
