A warm, comforting, and healthy Spanish-style lentil stew — simple, hearty, and full of flavor. Perfect for a cozy dinner any day of the week.
🧄 Ingredients (for 2 servings):
• 1 small yellow or red bell pepper, diced
• ½ onion, finely chopped
• 1 medium carrot, sliced into small rounds
• 1 large potato, peeled and cut into small chunks (preferably “chascadas” – broken with the knife)
• 2 sausages (pork or chicken), cut into pieces
• 1 tbsp olive oil
• 1 tbsp minced garlic
• 1 tbsp sweet paprika (pimentón dulce)
• 2 tbsp tomato paste
• 1 cup lentils (pardina or similar type that doesn’t require soaking)
• 1 bay leaf
• 1 brick (about 4 cups / 1 liter) chicken broth (or water)
• Salt and pepper to taste (or saffron salt if you have it)
👩🍳 Instructions:
1. Start by heating a generous drizzle of olive oil in a medium pot or skillet over medium-low heat.
2. Add the chopped onion, bell pepper, and garlic. Sauté gently until they start to soften and become fragrant — about 5–7 minutes.
3. Add the carrot slices, salt, and pepper, and cook for another 3–4 minutes.
4. Increase the heat slightly and add the sausage pieces. Sear until lightly golden.
5. Add the potato chunks, stir everything together, and then mix in the paprika and tomato paste. Stir well so all the flavors combine.
6. Add the washed lentils, bay leaf, and chicken broth (or water if you prefer a lighter stew).
7. Mix, bring to a gentle boil, then reduce the heat to low and cover.
• If using a pressure cooker, cook for about 20 minutes.
• If using a regular pot, simmer for 50–60 minutes, until the lentils are tender and the stew has thickened slightly.
8. Taste and adjust salt before serving.
