I had some #eggplant in the fridge ( nothing new) I seem to always buy eggplants with grand recipes in mind then end up not cooking them... well, these sad eggplants were not going to rot in my fridge (not this time) I made a quick #crunchy eggplant that no one could resist...kids included (and that's a big deal)
