Today we're making cashew chicken, a delicious, mildly spicy cashew chicken and broccoli stir-fry with rice for dinner. We sliced our chicken and then marinated the chicken to make it very tender. We stir-fried the broccoli florets, peppers, onions, and cashews in a tasty minced garlic and mildly spicy soy sauce mixture, combining all the flavors together. This recipe is easy to make and tastes amazing and will serve 2-3 guests for dinner, and we serve it topped with sesame seeds. Enjoy, and thanks for watching.

⬇️⬇️ RECIPE INGREDIENTS ⬇️⬇️
• 1 Pound of Chicken Breast Meat - Sliced
• 1/4 Green Bell Pepper - Sliced Julienne
• 1/4 Red Bell Pepper - Sliced Julienne
• 1/4 Onion - Sliced
• 4 Cups of Cooked Rice
• 2 TBSP of Rice Wine (Optional)
• 1 TBSP of Minced Garlic - To stir-fry the Vegetables
• 1 Cup of Cashew - Roasted
• Sesame Seeds
• Oil for the Pan
👉Chicken Marinade:
• 1/2 TSP of Salt
• 1/2 TSP of Baking Soda
• 2 TBSP of Water
• 1 TBSP of Cornstarch
• 1 TBSP of Oil
👉 Soy Sauce Mixture:
• 1/4 Cup of Chicken Broth
• 1/4 Cup of Soy Sauce
• 2 TBSP Oyster Sauce
• 1/2 TSP of Minced Garlic
• 1/2 TSP of Black Pepper
• 1/2 TSP of Red Pepper Flakes
• 1/8 TSP of Cayenne Pepper - Just a Pinch
• 1 TBSP of White Vinegar
• 1 TBSP of Cornstarch
👉Cooking Instructions:
• In a hot cast-iron skillet over medium-high heat, add about 2 oz. of oil to the pan and add the sliced marinated chicken to the hot pan and stir-fry quickly until done to your liking. Add salt and pepper to taste. Turn off the burner, remove the chicken, and place it in a bowl; set aside for later. In the same pan, set the burner to medium-high, add a little more oil if needed, and add the bell peppers, onions, and broccoli, and quickly stir-fry them. Don't overcook the vegetables, then add some rice wine (optional), and continue to stir-fry the vegetables for 1-2 minutes; when done to your liking, lower the burner heat to medium-low and add in the soy sauce mixture, the precooked chicken, and cashews and combine everything together, and you're done. Plate it up, serve over some white rice, and top with sesame seeds.
