Prawn and pork dumplings or "Siu Mai" as it's called in Cantonese is one of the most popular Dim Sum Dishes. Making these delicious dumplings doesn't need to be difficult and this is my easy-to-follow recipe on how to make this delicious pork and prawn dumpling dish at home.
Ingredients
1 Minced pork
2 Minced prawn
3 Grated ginger
4 Finely chopped spring onion
5 Sesame oil
6 Soy sauce
7 Bicarbonate of Soda
8 Salt and pepper
9 Carrot
10 Wonton wrappers
For the dipping sauce
1 Soy sauce
2 Rice vinegar
2 Chilli sauce
3 Sesame oil
4 Honey
There are literally hundreds, if not thousands, of dim sum dishes! But prawn and pork dumplings or siu mai (together with har gau or crystal shrimp dumplings) are among the 2 most popular dishes. It is often spelt variously as shāomài, Shumai, or Siomai. Siu mai is the Cantonese pronunciation. Whatever the spelling, the classic version of this dim sum dish nearly always contains pork and prawn or shrimp wrapped in a dumpling wrapper and topped with shrimp, roe or a slice of the scallop.
However, I have made this dumpling with chicken mince and shrimp and it is just as delicious.
Prawn and Shrimps are different species but they taste the same and I'll be using the terms interchangeably. However, if you have the option of using prawns or shrimp, I would use shrimp because they are usually cheaper. As the shrimp are minced in any event, there is not much point in spending the extra for the prawns. Siu mai is definitely one of my favourite shrimp recipes.
As this is a super easy recipe, I'm going to take a shortcut and use store-bought siu mai wrappers or wonton wrappers which are available from either the freezer section or chiller cabinets of all oriental stores. I actually bought my dumpling wrappers online from Amazon, and they were delivered to my door.
The advantage of making these prawn and pork dumplings at home is that you can make a complimentary sauce for them. At dim sum restaurants, you do not get a specific sauce but I like to dip the siu mai in the sauce of Cheung Fun (another type of dim sum).
You can eat these pork and shrimp dumplings with other dim sum dishes or as a side dish. However, I particularly like to make these dumplings for parties and special occasions as they can be a real treat both for those who are dim sum connoisseurs and those who have not yet tried them.
