In this episode, November and December slow the pace of fieldwork — but not the pace of decisions. With fewer contracts available, Charles and Anna focus on groundwork that will shape the farm’s future: clearing land, planning infrastructure, and laying the foundation for what comes next.

From walking grass fields and choosing what to cut, to winter forestry work and preparing space for a greenhouse, this episode is about building before growing. It’s also about learning when to push — and when to wait.

As the year closes, Highland Farms isn’t chasing scale yet.
It’s learning the land, understanding the valley, and getting ready for a much bigger spring.
