sabi ng lola ko ang original na recipe or traditional na ingredients ng BIBINGKA ang GALAPONG or glutinous rice paste na sa nadagdag na panahon at ng dahil sa ibat ibang version nito, ang galapong daw ay napag kakamalang rice flour na.
dito sa ating video ay naisip ko agad ang lola ko at naisip ko itong gawin pero on my own version. ito ay moist, fluffy at soft ng dahil sa natural na fermentation ng ating bigas plus nag dagdag pa tayo ng soda at baking powder sa ating homemade fermented galapong kaya mas lalo itong naging soft at may sticky texture.
Ingredients
3/4 cup normal short rice
1/4 cup glutinous rice (malagkit)
wash 5x with water
add 1 cup new water and soak for 6 hours
grind with stone grinder (or blender with grinder attachment) all together with the water for 30 minutes
transfer to bowl with cover
let it ferment overnight
put the following ingredients to galapong batter
1/2 teaspoon iodized salt
1/4 cup light brown sugar
1/2 cup white sugar
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
2 eggs
1/2 cup kakang gata or coconut cream in canned
1/4 cup melted butter
mix
put clean banana leaf on the pan or mold (heated with fire so softened)
i used my 22 cm pan

bake over preheated oven 350F for 35 minutes
up and down heat
then turn the oven to upper heat for another 5 minutes or until the top is toasted
rub with butter and sprinkle with white sugar
