近年很多人發現自己對麩質敏感或患有麩質不耐症,到底這是怎麼一回事?麩質是存在於大麥、小麥、燕麥、黑麥等穀物中的穀蛋白,又叫麵筋,Gluten的英文詞根glute就是膠水之意,用作做麵包、麵條、蛋糕等,能做出煙韌口感。但不少人的免疫系統對麩質過敏或有麩質不耐症,出現腸胃問題,容易產生氣體,形成脹氣。情況嚴重的,更會造成小腸炎症、吸收不良、疲勞、皮膚痕癢等症狀,稱為乳糜瀉(Celiac disease)。

As more and more people are going gluten-free, you might be wondering what is going on. Also known as seitan, gluten is, a protein found primarily in wheat, barley and rye. The name gluten is derived from the Latin word for ‘glue’; it is often used in the dough of bread, noodles, and cakes to give a chewy texture. Gluten allergies or intolerance can cause problems with the digestive system, resulting in gas and bloating. Celiac disease is the most severe form of gluten intolerance, with symptoms like inflammation of the small intestine, malabsorption, fatigue, and itchy skin rash (dermatitis herpetiformis).
