Starfruit – Use fresh starfruits (kamrakh) to make this pickle.
Pickling Spices – You will need regular pickling spices like fennel seeds (saunf), fenugreek seeds (methi dana), brown mustard seeds (sarson), cumin seeds (Jira), coriander seeds (dhaniya), Red chilli (Lal mirch).
To add a little color, add turmeric powder.
Mustard Oil – Use only mustard oil for pickling. It adds a pungent taste that no other oil will do and also preserves the pickle.

Wash the starfruits and wipe them well using a kitchen towel. Cut them into slices,add salt and turmeric powder and keep it in strong Sun for 3-4 days.
Roast mustard seeds, fennel seeds, fenugreek seeds, cumin seeds, coriander seeds and Red chilli and grind to make a coarse powder.
Mix the sliced starfruits, powdered spices and mustard oil in a non-reactive bowl.Transfer the pickle to a clean glass jar and again keep it in strong sun for 3-4 days. Close the jar with a tight fitting lid and store the pickle in a cool and dry place for upto a year.

Once the pickle is kept in the sun for 3 to 4 days, close the lid of the jar tightly and store it in a cool and dry place for up to a year.
