Vindaloo has a beautiful history. It was born in Goa in the 16th or 17th century, when the Portuguese settled there. The name comes from the Portuguese phrase “vino de alhos”, where “vino” means wine vinegar and “alhos” means garlic. Over time, this dish blended with Goan cooking styles and became the perfect fusion of Portuguese flavours and Indian spices.
Pork Vindaloo is hot, sour, spicy, and slightly pickle-like — a real celebration of deep flavours. The fatty pork belly, mixed with plenty of chillies, ginger, garlic, vinegar, and special spices, gives this dish its bold and unforgettable taste.
In this recipe, we use Kashmiri chillies with vinegar, ginger, and garlic to make a rich red marinade for the pork belly. Caramelised onions and a beautiful blend of spices add depth, aroma, and colour. Finally, the pork is slow-cooked until it becomes tender and melts in your mouth.
And remember — a Vindaloo does not have to burn your tongue! You can always adjust the chillies to your personal taste. The idea is to enjoy the perfect balance of heat, tang, and spice.

1 kg fatty pork meat/ beef/mutton
10 onions sliced
4-5 dry red chilies
1 tbsp cumin seeds
1 tbsp coriander seeds
4 bay leaves
1 tbsp turmeric powder
1tbsp coriander powder
1 tbsp cumin powder
1 tbsp red chili powder
1 tsp pepper powder
1/2 cup vinegar
1 cup mustard oil
2 tsp sugar
