Cooking Uku 3 Ways | Hawaii Shore Fishing

Join us as we hook into the bait fish candy of the sea, Big-eyed Scad. With live Big-eyed Scad as your bait, you don't know what you'll catch!

Today we are shore fishing for Halalu (Big-eyed Scad) to be used as bait to catch Uku (Gray Snapper). We're fortunate to hanapa (catch) a Gray Snapper, also known as the Gray Jobfish or Uku, in Hawaiian.

We will create three delicious Uku dishes for lunch and dinner. Plus a mystery bonus dish!



Dish 1
❤ Fresh Uku Sashimi
Eaten with wasabi and lightly dipped in soy sauce.

Dish 2
❤ Uku Karaage
Ingredients:
1 large egg
1/4 cup potato starch
Sea salt to taste
Shichimi togarashi to taste (Japanese 7 spice blend)

3 garlic cloves
Green onion to garnish

Sauce: 2 tsp Mayonnaise, 2 tsp Sweet Chili sauce

Dish 3
❤ Clear Fish Broth
Ingredients:
5 cups of filtered water
1 piece of kombu
Salt to tast


Mystery Dish 4
❤ Uku Fishcake Patties
Ingredients:
1 egg
2 tsp panko (Japanese style breadcrumbs)
3 cloves of garlic
1 tsp paprika
2 tsp mayonnaise
1/4 of a large onion
