Ingredients Used:-
For Kadhai Masala (Homemade Spice Mix)
4–5 dry red chilies
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp fennel seeds
20–25 black peppercorns
2 bay leaves
For Chicken Gravy
1 kg chicken (with bone or boneless)
3–4 tbsp oil
2 medium onions, finely chopped
1 tbsp ginger–garlic paste
3 medium tomatoes (pureed)
1 tsp salt (adjust to taste)
Ground homemade kadhai masala (prepared above)
1 tsp garam masala
1 tsp Kashmiri red chili powder
For Tadka (Tempering)
1 tsp ghee
1 onion, cut into cubes
1 capsicum, cut into cubes
2 green chilies, slit
A pinch of salt
Step-by-Step Recipe:-

1️⃣ Prepare the Kadhai Masala
Heat a pan on medium flame.
Add dry red chilies, coriander seeds, cumin seeds, fennel seeds, black peppercorns, and bay leaves.
Dry roast them for 1–2 minutes until aromatic.
Let them cool completely.
Grind into a coarse powder and keep aside.
2️⃣ Make the Chicken Curry
Heat oil in a kadhai.
Add chopped onions and sauté until golden brown.
Add ginger–garlic paste and cook until the raw smell disappears.
Add tomato puree and 1 tsp salt; cook until the oil starts separating.
Add the freshly ground kadhai masala, garam masala, and Kashmiri red chili powder.
Sauté the masala for 1–2 minutes.
Add 1 kg chicken and mix well so the masala coats the chicken properly.
Cook on medium flame until chicken starts releasing moisture.
Cover and cook until the chicken becomes tender.
3️⃣ Prepare the Tadka (Tempering)
In a separate small pan, heat 1 tsp ghee.
Add onion cubes, capsicum cubes, and green chilies.
Add a pinch of salt.
Sauté on high flame for 1–2 minutes (keep them crunchy).
4️⃣ Combine & Serve
Add this tadka into the cooked chicken.
Mix well and simmer for a few minutes so the flavors blend.
Serve hot with roti, naan, or steamed rice.
