Today’s recipe is:
Cheesy Tater Tot Meatloaf Casserole

Cheesy Tater Tot Meatloaf Casserole
Ingredients
1 cup barbecue sauce
1 cup ketchup
2 lbs. lean ground beef
1 cup crushed Ritz crackers (around 25 crackers) (you can use dried bread crumbs as a substitute)
2 large eggs
2 packages Lipton onion soup mix
800 g (24 oz) bag of Tater Tots
2 cups of shredded cheddar and mozzarella cheese
1/4 cup bacon bits
1 small red pepper
Directions
Preheat oven to 350°F
Spray with cooking spray a 9x13 inch baking dish
In small bowl combine barbecue sauce and ketchup. Stir until well combined.
Set aside.
In large bowl combine ground beef, crushed crackers, eggs, onion soup mix, red pepper and half of ketchup/barbecue sauce.
Mix thoroughly until well incorporated.
Press meat mixture into baking dish.
Pour remaining barbecue/ketchup sauce on top.
Spread sauce evenly.
Arrange Tater Tots on top.
Sprinkle cheese on top
Sprinkle bacon bits on top
Cover Casserole with aluminum foil and bake for 35 minutes.
After 35 minutes Remove aluminum foil and bake for another 40 minutes or until ground beef is thoroughly cooked
Remove from oven and let rest for a few minutes (this helps let the Casserole set and easier to serve)

Creamy Red Pepper Pasta
Ingredients
2 cups of medium shell pasta
1 16oz jar roasted red bell peppers drained
3/4 cup chicken stock
1 tablespoon olive oil
4 mild Italian sausages casings removed
2 skinless boneless chicken breasts
1/2 white onion
2 cloves minced garlic
1 1/2 teaspoons Italian seasoning
2 tablespoons flour
1 cup tomato sauce
1/2 cup heavy cream
1/2cup parmesan cheese
3-4 tablespoons Fresh basil chopped
Salt and pepper to taste
Directions
Cook pasta to package directions-- drain
In blender mix chicken stock and drained red peppers until smooth
In a large skillet heat olive oil over medium high heat
Add sausage, chicken and onion
Cook until chicken is cooked through, sausage is crumbled and browned. Drain excess fat.
Stir in garlic and Italian seasoning for 1 minute
Add flour and cook for 1 minute
Slowly add red pepper mixture and tomato sauce
Bring to a boil and reduce heat and simmer
Continue to simmer, stirring occasionally, until sauce is slightly thickened and reduced
Add pasta and cream. Cook until heated through
Season with salt and pepper.
Add parmesan cheese and heat until melted
Stir in basil

Creamy Sausage Potato Casserole
Ingredients
1 lb Italian Sausage casing removed
4 large potatoes ( peeled and Thinly sliced)
1 diced medium onion
2 cloves minced garlic
1 cup sour cream
1 can cream of mushroom soup
2 cups shredded cheddar cheese
1/2 cup milk
1 teaspoon salt
1/2 teaspoon pepper
2 tablesoon butter- melted
Directions
Preheat oven to 375°
Grease a 9x13 baking dish
In large skillet cook Sausage until browned and crumbled
Remove/ drain excess fat
In same skillet Add onion
Cook until translucent
Add garlic and cook for 1 minute
Remove from heat
In large bowl Add sausage mixture, sour cream, mushroom soup, milk, cheddar cheese, salt and pepper
Mix well
Layer half of potatoes in baking dish
Spread half of Sausage mixture over potatoes
Add another layer of potatoes
Spread remaining Sausage mixture over potatoes
Drizzle melted butter over the top
Cover baking dish with tin foil
Bake for 45 minutes then remove foil
Bake another 15 minutes or until potatoes are tender and top is bubbly and golden
Remove from oven
Cool for a few minutes
Remove from oven and let rest for a few minutes (this helps let the Casserole set and easier to serve)
