1 ½ lb boneless chicken breast cut in cubes (approximately 1 kg)
For marination:
1 tsp turmeric (haldi)
2 ½ tsp red chili powder
2 ½ tsp coriander powder (dhania)
2 tsp roasted cumin powder (jeera)
1 ½ tsp salt
For blending:
¾ cup fried onions
4-5 green chilies
7-8 garlic cloves
1 inch piece ginger
Handful coriander leaves (cilantro)
7-8 mint leaves
½ cup yogurt
For seasoning:
2-3 tbsp oil
1 stick cinnamon (dalchini)
4-5 peppercorns
3 cardamom (elaichi)
4-5 cloves (laung)
1 small piece of stoneflower (dagadful)
2 bay leaves (tejpatta)
15-20 cashews
For garnishing:
¼ cup cream
1 tsp garam masala
Grind the blending ingredients to a smooth paste without water.
Apply all the above marination ingredients along with the blended paste to the chicken and keep aside for 1 hour.
Heat oil and add all the seasoning ingredients on by one. Saute for 10 seconds.
Add the marinated chicken, mix well and bring to a boil.
Cover and cook on medium flame for 12-15 minutes.
Check for doneness. Add cream and garam masala.
Mix again and cover and cook for another 5-7 minutes on low flame.
Shahi chicken is ready to serve.
Serve with pulao or tandoori roti or naan.
