Easy Smoked & Stuffed Pork Tenderloin Recipe!

Try this EASY Pork Pinwheels recipe! Smoked on the Camp Chef Apex pellet smoker using competition blend pellets, a perfectly seasoned and stuffed pork tenderloin and a beautiful butter mop sauce. You wont be disappointed in this super easy stuffed pork recipe!
Ingredients:
3 lb Pork Tenderloin, trimmed and butterflied
8 oz Cream Cheese, softened
1/4 cup - diced onions
3 cloves garlic, minced
4 sun-dried tomatoes, chopped
1 Tsp SunDried tomato oil
Spinach (1/2 cup)
Salt
Pepper
Garlic powder
Onion powder
paprika
Directions:
Preheat smoker to 250 degrees.
Trim the tenderloin and butterfly open. Season evenly with salt, pepper, garlic powder, onion powder and paprika. Set aside
Saute diced onion for 3-5 minutes until softened.
Add garlic, cook for 30 seconds or until fragrant, then add in sun-dried tomatoes with oil.
Cook 2 more minutes, then add in spinach and mix together.
Take off heat and add cream cheese, salt and pepper.
Mix well then smear evenly on open tenderloin.
Roll tenderloin closed and tie together with butchers twine.
Cook tenderloin for 45 min-1 hour or until internal temperature has reached 140 internal.
I like to baste my pork tenderloin with Italian butter baste of choice eve 10 minutes to keep it moist and add more flavor.
Let rest for 5 minutes and cut into pork pinwheels to serve.
