Simple mutton curry is a beginner-friendly Indian dish featuring tender goat meat in a spiced onion-tomato gravy, ready in under an hour with a pressure cooker.� This quick recipe uses basic pantry staples and whole spices for authentic flavor without complexity.
Ingredients
500-600g mutton with bones, cut into medium pieces
3 medium onions, chopped
2 tsp ginger-garlic paste
2 medium tomatoes, chopped
Whole spices: 4 green cardamoms,
5 cloves, 3 cinnamon pieces, 2 black cardamoms, 10 peppercorns, 2 dry red chilies
hi½ tsp turmeric powder, 2 tsp red chili powder, 2 tsp coriander powder, 1 tsp cumin powder
3 tbsp whisked yogurt
1 tsp salt
3 tbsp oil
2 cups water
Steps
Heat oil in a pan, add whole spices and red chilies, then fry onions for 10 minutes until light brown.
Stir in ginger-garlic paste for 2 minutes, add mutton, powders, and salt; bhuno (stir-fry) on high for 2 minutes, then medium for 10-12 minutes until oil separates.
Lower heat, mix in yogurt for 5-7 minutes until cooked, add tomatoes and cook 10 minutes until soft; pour in water, transfer to pressure cooker for 3-4 whistles, or simmer in pan until tender.
Serve hot with rice or roti.�
